Operating within Mexico's Denomination of Origin framework — which recognizes Chihuahua, Coahuila, and Durango as protected production regions — the brand positions itself as a premium, craft-oriented player in a category it describes as the next major Mexican spirit after tequila and mezcal.

The company currently offers two core expressions: a Blanco and a Reposado. The Blanco is characterized by a light, aromatic, and dry profile with herbal and mineral notes and a clean, elegant finish. The Reposado builds on the Blanco base by incorporating a resting period in wood to add softness and depth while preserving the spirit's inherent clarity and balance. Both expressions reflect a production philosophy centered on restraint, terroir, and the natural character of the Dasylirion plant.

Sotol production follows a traditional craft-spirit process: wild Dasylirion plants are harvested after 15 to 20 years of natural growth, with no irrigation or chemical inputs required. The plant's hearts (piñas or cabezas) are cooked to convert carbohydrates into fermentable sugars, crushed to extract the must, fermented using native or cultured yeast, and then distilled — typically twice — before being bottled unaged or rested in oak. The brand's expressions fall under the 100% Puro designation, meaning all fermentable sugars are derived exclusively from Dasylirion.

Sotol Romo differentiates itself through a strong educational narrative around the category's 800-year Indigenous heritage, the botanical uniqueness of the Dasylirion plant (a member of the Asparagaceae family distinct from agave), and the spirit's flavor profile — described as lifted, dry, and mineral-forward with notes of citrus, red fruit, cinnamon, and herbal complexity. The brand targets spirits enthusiasts, trade buyers, and on-premise accounts seeking to expand beyond established agave-based categories.
